Method
1.Place all ingredients in a heatproof bowl. Place over a saucepan of simmering water. Stir, until melted and combined.
2.Continue to cook, stirring occasionally, 20-25 minutes, until curd thickens and coats back of spoon. Don’t allow curd to get too hot.
3.Transfer bowl to a sink of iced water. Stand, stirring occasionally, 10 minutes, until cooled. Cover surface of curd with plastic wrap. Chill for 3 hours, until cold and thick.
Don’t allow curd to get too hot in Step 2, or it will split and you’ll need to start over.
