Method

1.Using a mandoline or very sharp knife, cut potatoes into thin slices. Place in a colander and wash well with cold water. Drain thoroughly and pat dry with a tea towel. Place in a large bowl with melted butter and thyme. Toss to coat and season well.
2.Preheat oven to 200°C or 180°C fan. Line a 20cm heavy-based frying pan with potato slices in neat overlapping circles. Fill pan in even circles with remaining potato. Cook on low heat for 5 minutes, until lightly browned, using a metal spatula to lift potato to ensure it isn’t burning.
3.Transfer pan to oven and bake for 30 minutes, until potato is tender and golden. Season, cut into wedges and serve.
