1.Preheat oven to moderate, 180°C. Line two 12-hole muffin pans with paper patty cases.
2.In a large bowl, combine all ingredients. Using an electric mixer, beat on medium speed for 2-3 minutes, until well combined.
3.Spoon mixture evenly among cases. Bake for 15-20 minutes, until golden and firm to the touch.
4.Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Decorate with pink glace icing, if liked (see Notes).
MAKES 24 For glace icing, combine 1 1/2 cups sifted icing sugar with 20g melted butter and 1-2 tablespoons boiling water. Stir until smooth, adding a few drops of pink food colouring.
