Method

1.Cut bottom off witlof, remove 2 outer leaves and discard. Pull next 6 leaves from each whitlof and place in a large bowl of iced water.
2.Place mayonnaise, wasabi paste and lime juice in a mixing bowl; whisk to combine.
3.Stir through crab, chives and celery; season with salt and pepper.
4.Drain leaves and dry on a clean tea towel. Place on a serving platter; fill with crab mixture.
5.Top each with a little salmon caviar and serve.
