Walnut coffee creams

These delightful biscuits are perfect served with hot espresso.

Ingredients

Method

1.Preheat oven to 150°C. Lightly grease and line 2 oven trays with baking paper.
2.In a small jug, combine coffee and water, stirring to dissolve.
3.In a bowl, using an electric mixer, beat butter and icing sugar together, until creamy. Beat in coffee mixture. Lightly fold in combined sifted flour and custard powder.
4.Roll tablespoons of mixture into balls and arrange on trays, 3cm apart. Flatten slightly and push a walnut into half the biscuits. Bake 20-25 minutes. Allow to cool on trays.
5.Meanwhile, to make filling, in a jug, dissolve coffee in water and set aside. In small bowl, using an electric mixer, beat butter until pale. Gradually add icing sugar, beating until smooth. Beat in coffee. Spread over flat side of plain biscuits. Sandwich together with remaining biscuits, walnut side up.

This dough is quite sticky, so dusting your hands in flour before rolling into balls will prevent it sticking to your fingers.
