Ingredients

Method

1.Heat half the oil in a wok or large frying pan on high. Stir-fry onion and garlic for 1 minute, until onion is tender. Add carrot and stir-fry for 1-2 minutes.
2.In a jug, whisk together soy sauce, sugar and star anise. Set aside.
3.Heat remaining oil in same wok on high. Add chilli, celery, snow peas and bamboo shoots. Stir fry for 1-2 minutes, until vegetables are tender. Toss noodles and reserved sauce through. Stir-fry for 1-2 minutes. Keep warm.
4.Heat a small, non- stick frying pan on medium. In a jug, whisk eggs, sesame seeds and oil together, until combined. Pour into pan and swirl mixture around to cover base of pan. Cook for 1-2 minutes, until the surface starts to set. Loosen the edges with a spatula. Flip over edges to fold, and remove. Slice and set aside.
5.Serve chow mein topped with omelette and onion.
