Method
1.Bring a large saucepan of salted water to the boil. Cook pasta according to packet directions. Drain well; return to pan.
2.Meanwhile, heat oil and butter in a large frying pan on high. Saute ham, mushrooms and garlic 3-4 minutes, until ham is crisp and mushrooms are tender. Stir in wine. Simmer 2-3 minutes, until almost evaporated.
3.Toss through tortellini, cream and parmesan. Season to taste. Serve sprinkled with parsley and extra parmesan. Accompany with salad.
Bacon, salami or prosciutto can be used in place of ham. To reduce fat content, use light cream and omit butter.
