Tender, flaky fish is steamed to perfection with fragrant Asian herbs and spices. Serve with fragrant steamed greens and a sprinkle of toasted sesame seeds for a light, healthy dinner.
1.Bring some water to boil in a wide-bottomed pot that can fit a large bamboo steamer on top.
2.Place fish in a shallow bowl, pour over soy sauce and sesame oil. Place in the steamer basket with the lid on. Steam fish 5 minutes, depending on the thickness of the fillets.
3.While fish is steaming, heat vegetable oil in a wok over medium-high heat. Add green vegetables. Stir-fry 1 minute. Add chilli, ginger and garlic. Cook further 30 seconds.
4.Stir in the oyster sauce and water. Stir-fry 1-2 minutes. Add basil leaves.
5.To serve, divide the stir-fried greens between four serving plates. Top each with a place of fish. Sprinkle with sesame seeds.
Cod, barramundi or snapper are great varieties of fish for this recipe.
