Method
1.Preheat the oven to 220ºC. Heat 2 large baking trays in the oven for 10 minutes.
2.Meanwhile, heat a large, nonstick frying pan over a medium heat. Spray with oil. Add the onion and capsicum, and cook, stirring occasionally, for 4 to 5 minutes or until soft.
3.Increase the heat to high. Add the mince and cook, stirring with a wooden spoon to break up any lumps, for 4 to 5 minutes or until the mince changes colour. Add the cumin, paprika and coriander, and cook, stirring, for 1 to 2 minutes or until aromatic. Stir in the currants and parsley.
4.Place the open pita breads on a baking tray and divide the pasta sauce and mince mixture among the pita breads. Bake for 8 to 10 minutes or until the bases are crisp. Top with rocket and serve with the yoghurt.
We used pita bread like a pizza base and each one with about 4 dessertspoons of the mince, but there is enough for five!
