1.Preheat oven to 180°C/160°C fan-forced. Place potato and the water in a bowl. Microwave on High (100%) for 5 minutes or until tender. Drain.
2.Grease a 20cm ovenproof frying pan. Layer potato, salami, half the onion, parsley and cheese in pan. Whisk egg and cream in a jug. Pour over potato. Cook over low heat for 2 minutes. Bake for 8 minutes. Sprinkle with extra cheese; bake for 5 minutes or until golden.
