Sesame-coated flathead with stir-fried noodles

For a speedy weeknight dinner, try this moreish noodle dish with crispy sesame-coated fish.

Ingredients

Method

1.Combine sesame seeds and flour on a plate. Dip fish into the mixture to coat, pressing firmly.
2.Heat half the oil in a large frying pan on high. Cook fish for 2-3 minutes each side until cooked through. Drain on paper towel. Keep warm.
3.Heat remaining oil in a wok. Stir-fry vegetables for 2-3 minutes until just tender. Add noodles, sauce, sesame oil and chilli. Stir-fry for 1-2 minutes until heated through.

Coat the fish in advance, cover and chill until required. When buying fish, ask the fishmonger if it has already been frozen and thawed. If it has, don’t refreeze uncooked fish.
