Ingredients

Method

1.Preheat oven to 180°C. Line an oven tray with baking paper.
2.Dust pork in flour, shaking off excess. Dip in egg, than coat in combined crumbs, parmesan, chives and seeds. Chill 20 minutes.
3.Heat oil in a frying pan on medium. Cook cutlets 2-3 minutes each side, until golden and crisp. Transfer to tray.
4.Bake 4-5 minutes, to completely cook through. Serve with mash and steamed vegetables.

Make fresh breadcrumbs using a airtight container in mixture of leftover bread scraps, including wholegrain wholemeal or white. Keep unused breadcrumbs in the freezer.
