Method
1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.In a bowl, combine mince, breadcrumbs, egg, onion and taco seasoning. Roll 2 tablespoons of mixture into balls and arrange on tray.
3.In a large oven-proof skillet, heat oil on medium. Cook meatballs in two batches for 3-4 minutes each until browned. Transfer to a plate.
4.Add tomatoes and sauce to the pan, stirring to combine. Bring to the boil, then return meatballs to pan.
5.Sprinkle with cheese. Bake for 20-25 minutes until sauce thickens, and cheese melts and turns golden. Serve accompanied with guacamole, tortillas and jalapeños.
Note
- To make chipotle barbecue sauce, mix 1 cup smoky barbecue sauce with 1 tablespoon chipotle hot sauce.
