Ingredients

1/2 cup firmly packed fresh mint leaves

40 gram baby rocket leaves

1/2 cup (70g) roasted pistachios

1/4 cup (20g) grated parmesan

2 clove garlic, quartered

1 tablespoon lemon juice

2 tablespoon water

1/2 cup (125ml) olive oil

Method

1.Blend or process mint, rocket, nuts, cheese, garlic, juice and the water until combined. With motor operating, gradually add oil in thin, steady stream; process until smooth.

Also goes well with potato salad; pan-fried beef eye-fillet steaks (omit water so the pesto has a thicker consistency); grilled lamb kebabs.
