1.Preheat oven to 180°C (160°C fan-forced). Place bread on 2 baking trays.
2.Empty sauce sachet into a large heatproof jug. Stir in boiling water. Stand 5 minutes, whisking occasionally, until sauce thickens. Stir in ricotta and 1/4 cup of the mozzarella.
3.Spread cheese sauce mixture over bread on tray. Top with chicken, tomato, capsicum and pineapple. Sprinkle remaining mozzarella over top. Bake 12-15 minutes, or until cheese is golden and bubbly. Sprinkle with onion. Serve pizza with salad.
Add shaved ham or diced bacon. Spread base with bought basil pesto or corn dip.
