1.Heat oil in a large saucepan on high. Deep-fry wonton wrappers in 3 batches for 1 minute until golden. Drain on paper towel. Break 2 wrappers into pieces.
2.In a large bowl, combine the prawns, lettuce, bean sprouts, avocado, mint and broken wonton wrappers.
3.Make the mayonnaise. In a jug, whisk together all the ingredients. Season to taste.
4.Place one unbroken wonton wrapper on each serving plate. Top with the prawn salad and sprinkle with the wonton wrapper pieces. Drizzle over the mayonnaise to serve.
Replace lime zest with a finely chopped kaffir lime leaf. Add some sliced mango or rock melon.
