Method

1.Place couscous in a medium heatproof bowl, stir in boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool to room temperature.
2.Add mince, carrot, coriander and garlic to couscous. Using wet hands, shape mixture into 4 patties.
3.Heat half the oil in a medium frying pan over moderate heat. Cook patties for 3 minutes each side or until browned and cooked through. Drain on paper towels.
4.Meanwhile, cook kumara in a steamer over a saucepan of simmering water for 5-6 minutes or until tender. Let cool slightly.
5.To serve, combine kumara, spinach, pine nuts, ricotta, juice and remaining oil in a large bowl. Season with salt. Serve salad with patties.
