Method
1.Heat oil in a frying pan on high. Cook pear and almonds for 3-5 minutes, tossing occasionally, until starting to colour.
2.Add honey and balsamic vinegar. Cook for another 1-2 minutes, until starting to caramelise. Reduce heat to low. Add radicchio and cook for 1 minute each side, until beginning to wilt. Season to taste.
3.Meanwhile, spray a frying pan with oil and heat on high. Cook pork for 3-5 minutes each side, until golden and cooked through. Arrange on plates and serve with pear, almonds and radicchio.
To prepare radicchio halves or quarters for cooking, make sure the base remains intact so the leaves stay together.
