Method

1.Put watermelon, brown sugar, ginger juice and lime juice in a blender and blend until smooth. Strain watermelon mixture into a bowl, but don’t press; discard the fluffy stuff caught in the sieve. Cover and chill; stir before pouring into glasses.
2.Prepare the glasses a few minutes before serving the drink (if done too far in advance, the salt rim hardens). Put lime juice in a small ramekin. Put the salt and chilli powder, mixed together, in another ramekin. Dip the rims of glasses in lime juice, let excess drip off, then dip in chilli salt. Leave to dry for a few minutes before pouring in the watermelon juice. Serve drink immediately.
