1.Line two baking trays with baking paper. Combine sugar, evaporated milk, butter and a pinch of salt in a large heavy-based saucepan on low heat. Stir until sugar dissolves. Add pecans and cook, stirring, on medium heat, until mixture reaches 116°C on a sugar thermometer.
2.Remove from heat and cool for 5 minutes. Stir rapidly until mixture thickens and coats pecans. Drop teaspoons of mixture onto prepared trays. Cool until set.
If the mixture hardens, stir in a few drops of hot water. If you don’t have a sugar thermometer, drop a teaspoon of mixture into iced water. It should form a soft ball when ready.
