Method
1.Heat oil in a large frying pan or wok on high. Deep-fry the noodles in 2 batches, removing each batch as the noodles puff up (this will happen quickly). Drain on paper towel.
2.Drain all except 1 tablespoon of the oil from pan. Add egg and cook on high, swirling to cover base of pan to make a thin omelette. Remove from pan. Roll up and roughly chop. Set aside.
3.To make the dressing; whisk together the tomato sauce, lemon juice, sugar and sauces in a jug. Set aside.
4.Brush the pan with extra oil. Add the pork mince. Cook, stirring, for 1-2 minutes until well browned. Add the prawns, garlic and chopped chilli. Cook, stirring, until combined.
5.Add the dressing and stir until sugar dissolved. Toss through noodles until combined and heated through. Top with chopped omelette, onion and sliced chilli to serve.
