Method
1.Preheat oven to 180°C. Line two baking trays with baking paper. Roll level teaspoons of chilled basic biscuit dough into balls and place on prepared trays. Press down with a fork.
2.Bake for 12 minutes, until lightly coloured. Cool completely on wire racks before storing in an airtight container.
3.Meanwhile, to make lemon butter, heat all ingredients in a heavy-based saucepan on medium. Stir constantly for 5-10 minutes, until thick. Do not allow mixture to boil as it will curdle. Remove from heat and cool completely, stirring occasionally.
4.Just before serving, join biscuits in pairs with 1/2 teaspoon of Lemon Butter between each one.
