Method
1.Combine tea, mint and the water in a small saucepan and bring to the boil. Reduce heat. Simmer, uncovered, for 5 minutes.
2.Stand 1 minute, then strain into a large heatproof jug. Stir in juice and sugar; cool. Cover and refrigerate until cold, then serve over ice.
Lemon balm tea is available from health food shops.
