Method
1.Heat oil in a large wok or frying pan on high. Stir-fry crab segments 4-5 minutes, tossing gently until shells change colour (to orangey-red) and are almost cooked through.
2.Add ginger, chilli and garlic to wok. Stir-fry 1 minute, until fragrant. Stir in tomato, vinegar and coriander. Stir-fry 2-3 minutes, until cooked, tossing frequently. Serve crab with sauce and extra coriander.
To prepare crab, pull back the V-shaped tail flap and lever off the top shell from the body. Remove and discard stringy white gills on either side of the body. Chop crab into quarters, using a cleaver.
