Ingredients

Method

1.Drain mozzarella and cut each into 3 equal slices. Pat dry with paper towel. Dust in flour, shaking off excess. Dip in egg. Roll in bread crumbs crumbs to coat generously. Transfer to a tray. Chill 10 minutes.
2.Heat oil in a large deep-frying pan on high heat. Fry mozzarella slices in 4 batches, 2-3 minutes each, until golden. Drain on paper towel.
3.In a bowl, combine radicchio, witlof and onion. In a small bowl, whisk together lemon zest, lemon juice, honey and oil. Season to taste and toss through salad.
4.Top salad with fried mozzarella and serve with lemon wedges.

Try wedges of camembert or brie in place of mozzarella.
