Fresh, fragrant and full of texture, this delicious Asian stir-fry noodle dish is beautiful tossed with scrambled eggs, crunchy peanuts and fresh coriander.
1.Heat oil in a work. Stir-fry garlic and ginger until golden. Add pork. Stir-fry 2-3 minutes, until cooked. Mix in prawns. Stir-fry 2 minutes.
2.Reduce heat. Stir in lemon juice and fish sauce. Simmer, tossing, 1 minute. Stir through noodles.
3.Push mixture to one side of work. Add eggs, stirring, until scrambled. Toss noodle mixture through eggs and add all remaining ingredients. Stir-fry 1 minute. Serve with lemon or lime.
Chicken breast fillet may be used in place of pork. If desired, add chopped chilli or quartered cherry tomatoes.
