Method
1.Place chicken, onion, egg and stale breadcrumbs in a food processor and process until combined. Shape level tablespoon measures of mixture into patties.
2.Combine packaged breadcrumbs and chicken salt on a large plate. Roll chicken nuggets in mixture to coat well.
3.Heat large saucepan on high and add oil to a depth of 5cm. Cook nuggets in hot oil, in batches, until tender and browned. Remove with a slotted spoon and drain on paper towel.
4.Place tomato sauce, barbecue sauce, sugar and vinegar in a bowl and mix well to combine. Serve warm nuggets with sauce, green salad and wedges, if desired.
Chicken salt is available in the spice section of supermarkets. Chicken nugget mixture can be made ahead of time. Cover and chill overnight before cooking or make a double batch and freeze half for another meal.
