1.Heat oil in a wok or large frying pan. Add beef mince and stir-fry over high heat for 5 minutes to brown. Remove to one side.
2.Add ginger, garlic and onion to the pan, then stir-fry for 2 minutes to lightly brown onion. Add frozen vegetables, sweet chilli and soy sauce, then stir-fry for 5 minutes until hot, adding a little water if necessary to cook the vegetables.
3.Return mince to the pan, toss and stir-fry for 2 minutes more. Serve in bowls scattered with peanuts and coriander.
It is possible to substitute lamb, pork, chicken, turkey mince or sausage meat in most recipes e- each will give a different flavour to the finished dish.
