Baked Southern fried chicken with spicy pineapple slaw
Swap the deep fryer for the oven with this clever baked Southern fried chicken recipe. Served with Southern-style pineapple coleslaw, this dish makes a tasty family dinner or lunch
1.Combine buttermilk, paprika, salts and pepper. Add chicken, stirring to coat. Chill, covered, for several hours or overnight.
2.Preheat oven to hot, 200°C. Line an oven tray with baking paper.
3.In a bowl, combine flours and salt. Coat chicken pieces in flour mixture and place on tray. Spray with olive oil. Bake for 20-25 minutes until cooked through.
4.For Southern coleslaw: In a bowl, combine all ingredients. Season to taste.
5.Sprinkle chicken with spring onion and accompany with coleslaw.
