Tuna, zucchini and potatoes are formed into delicious patties and lightly fried until golden. Serve with steamed green beans and lemon wedges for a tasty dinner.
1.Place potatoes in saucepan, cover with cold water, bring to boil on high. Boil 15-20 minutes, until tender. Drain well, transfer to large bowl. Roughly mash, cool.
2.Add tuna. zucchini, carrot, cheese, parsley and juice. Season to taste and mix well.
3.Line an oven tray with baking paper. Divide mixture into 10 patties. Coat in breadcrumbs. Chill on tray 20 minutes.
4.Heat oil in large frying pan on medium. Cook patties in 2 batches, 3-4 minutes each side, until golden. Drain on paper towel.
5.Serve with steamed green beans and accompany with lemon wedges and mayonnaise.
