Method
1.Preheat grill on high. Line grill tray with foil. In a large saucepan, heat olive oil on high.
2.Saute onion and garlic 1-2 minutes until onion is tender.
3.Stir in stock and diced tomatoes. Simmer 5 minutes (puree tomato mixture, if preferred).
4.Stir in beans and season to taste. Simmer a further 5 minutes.
5.Meanwhile, arrange 8 slices bread on tray. Grill until toasted on one side. Turn and sprinkle each evenly with cheese.
6.Grill 1-2 minutes until cheese melts. Serve soup sprinkled with chives or parsley. Accompany with cheese toast.
