1.Heat a large frying pan over moderate heat. Spray onion with oil. Add onion to pan; cook, stirring, 3-4 minutes, or until soft.
2.Add mince; cook, stirring with a wooden spoon to break up lumps, 5 minutes, or until browned. Add spices and garlic to pan; cook, stirring, 30 seconds, or until fragrant. Add corn and beans; cook, stirring 5 minutes, or until heated. Remove from heat.
3.Place couscous and butter in a large heatproof bowl; stir in boiling water. Cover with plastic food wrap; set aside 5 minutes, or until liquid is absorbed. Using a fork, fluff and separate grains.
4.Add mince mixture, tomato and avocado to couscous. Season with salt. Stir to combine. Spoon into shallow serving bowls. Serve with lemon wedges.
