1.Preheat oven to moderate, 180°C. Lightly grease a shallow 2-litre rectangular oven-proof dish.
2.CHESEE SAUCE: Melt butter in a saucepan. Stir in flour. Cook, stirring, for 1 minute. Remove from heat. Slowly mix in milk, until smooth. Return to heat and cook, stirring, until mixture boils. Cook for 3 minutes. Remove from heat and add half the heese. Season.
3.Halve sausages lengthways. Arrange half in dish. Top with tomatoes and onion. Cover with eggplant, potato and remaining sausage. Pour cheese sauce over. Sprinkle with the remaining cheese.
4.Bake for 1 hour, until potato topping is and golden. Accompany with salad or vegetables of choice.
