1.Preheat oven to 180ºC (160ºC fan-forced).
2.Make 1cm cuts in each potato, slicing about three-quarters of the way through.
3.Combine potatoes with oil in a large baking dish. Sprinkle with salt and freshly ground black pepper. Roast about 1 hour.
4.Increase oven temperature to 220ºC (200ºC fan-forced). Roast potatoes further 15 minutes or until browned and tender. Sprinkle with rosemary.
