Method

1.Lightly whisk ricotta and egg in a bowl until smooth. Stir in ham, green onion and chives. Stir in sifted flour and bicarbonate of soda and season to taste.
2.In a frying pan, heat oil on medium high. Shallow-fry spoonfuls of ricotta mixture in batches 2-3 minutes, until golden and cooked through. Drain on paper towel and serve with tomato chutney or relish.

Press down with the back of a spoon to flatten the fritters in the pan so they’ll be cooked through as soon as they’re golden.
