1.Heat oil in a large frying pan over moderate heat.
2.Add pork, in batches; cook 2-3 minutes each batch, or until seared. Transfer to a heatproof bowl.
3.Add onion and carrot to pan; cook, stirring, 3 minutes. Add garlic and fennel; cook, stirring, 30 seconds, or until fragrant.
4.Add tomato and stock; bring to the boil. Reduce heat. Add pork; simmer, covered, 1 hour. Uncover; simmer a further 30 minutes, or until sauce thickens.
5.Remove pork from sauce; using a fork. shred pork.
6.Return pork to sauce. Bring to a simmer over low heat. Remove from heat; stir in coriander and season with salt. Spoon into a large serving bowl. Serve with tortillas, cheese, cucumber and cream.
