Method

1.Preheat oven to moderate, 180°C. Lightly grease 8 recesses of a muffin pan.
2.In a bowl, combine mince, breadcrumbs, half the onion and cheese. Season to taste; mix well.
3.Press mixture into recesses to fill. Spoon relish over. Bake for 15-20 minutes, until cooked and golden. Rest in pan 2 minutes.
4.Meanwhile, cook potatoes in boiling salted water for 12-15 minutes, until tender. Drain; set aside.
5.In the same saucepan, melt butter on high. Saute remaining onion and garlic for 1-2 minutes. Return potatoes to pan with milk. Mash well. Season. Stir for 1-2 minutes over low heat.
6.Remove loaves from pan, retaining pan juices to drizzle, if liked. Serve sprinkled with thyme and accompany with mash and beans.
