1.Preheat oven to moderate, 180°C. Lightly grease a 10 x 20cm loaf pan.
2.Heat oil in a large frying pan on medium. Saute onion, celery and garlic 3-4 minutes, until tender. Add apple; cook, stirring, 4-5 minutes, until most of the liquid has evaporated. Cool.
3.In a large bowl, combine mince, breadcrumbs, egg, sage and onion mixture; season to taste.
4.Press mixture into prepared pan. Smooth top; cover with foil. Bake 25 minutes. Drain off excess fat. Bake a further 30-35 minutes, until cooked through.
5.Meanwhile, to make spicy apple relish, heat oil in a medium pan on high. Saute onion 2-3 minutes, until tender. Add chilli; cook 1 minute, until fragrant. Blend in vinegar and sugar; cook, stirring, until sugar dissolves. Mix in apple and sultanas; cook, stirring, 8-10 minutes, until apple is soft and tender.
6.Serve meatloaf sliced with spicy apple relish, mashed potatoes and green beans.
Make fresh breadcrumbs with day-old bread. Simply whizz it in a food processor, or grate it.
