Pork and potato with apple salsa

Pork and apple have been paired together for centuries! This simple recipe replaces traditional apple sauce with a fresh and crunchy salsa.

Method

1.Using a fork, prick potatoes all over; place on a heatproof plate. Microwave on High (100%) for 3-4 minutes or until just tender. Transfer to a chopping board. When cool enough to handle, thickly slice potatoes; place in a medium heatproof bowl. Season. Add half the oil; toss to coat.
2.Preheat a char-grill pan or barbecue plate over moderately high heat. Add potato and pork; cook and turn for 6-8 minutes or until potato is browned and pork is cooked.
3.To make salsa, combine apple, parsley, almonds, zest, juice and remaining oil in a medium bowl. Season. Serve pork and potato with salsa.

Use pork leg steaks or chops. Use pears instead of apples.
