Method
1.Heat oil in a large saucepan. Sauté capsicum, onion and garlic for 1-2 minutes, until onion is tender.
2.Stir in rice, stock, tomatoes and juice. Season to taste. Bring to boil. Reduce heat. Simmer, covered, for 10-15 minutes, until rice is tender and stock has been almost absorbed.
3.Add marinara to pan. Cook, covered, for 5 minutes. Fluff rice with a fork. Add basil. Serve with bread and salad.
If desired, add a little chopped chilli to this dish during cooking.
