Method
1.Combine mince and 2 teaspoons chilli powder in a bowl; shape into balls.
2.Heat oil in a large frying pan over moderate heat; cook and turn meatballs 4-5 minutes, or until browned and cooked.
3.Meanwhile, place couscous in a medium heatproof bowl; stir in boiling water. Cover with plastic food wrap; set aside 5 minutes, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool slightly.
4.Combine sour cream, juice and remaining chilli powder in a small bowl.
5.Add meatballs, tomato. avocado. onion, coriander and corn to couscous; toss gently to combine.
6.Spoon into shallow bowls; drizzle with sour cream dressing. Serve at once.
Look for mexican chilli powder in the spice aisle of your supermarket. You can also use taco seasoning.
