Method
1.Place lamb in a single layer in a shallow dish.
2.In a bowl, combine lemon, oil, mustard and thyme; season to taste. Pour over lamb, turning to coat. Set aside at least 30 minutes, turning occasionally.
3.Meanwhile, preheat a char-grill or barbecue plate on high. Reduce heat to medium; cook lamb 4-5 minutes each side, until cooked to taste. Remove; rest, covered, 5 minutes. Char-grill zucchini 1-2 minutes each side, until tender.
4.Serve lamb with zucchini, salad and a lemon wedge on the side.
Parsley can be used as an alternative to thyme.
