Method

1.Place passionfruit pulp, sugar, zest, juice, vanilla bean and seeds and water in a saucepan over medium-high heat.
2.Simmer 10 minutes, until syrupy. Remove from heat; transfer to a small bowl to cool slightly.
3.Place all fruit into a large mixing bowl.
4.Discard vanilla pod from syrup. Pour three-quarters syrup over fruit salad; toss well to combine. Cover with plastic wrap; chill until cold.
5.Toss through mint leaves, scoop salad into serving bowls and drizzle with remaining fruity syrup.
