Method

1.Preheat oven to 200°C. Lightly grease a 6 x 1-cup Texas muffin tray.
2.Heat oil in a large frying pan on medium. Saute onion and garlic 1-2 minutes until tender. Add spinach and cook 1-2 minutes until wilted. Drain well and roughly chop. Cool slightly.
3.Layer 4 sheets of filo, brushing each with butter. Cut into 6 equal squares. Line muffin recesses with pastry. Repeat with remaining pastry and butter. Cut into 6 squares for lids Cover and set aside.
4.In a bowl, combine spinach mixture, cheeses, dill and eggs. Season to taste. Spoon mixture evenly among cases. Top with remaining pastry sheets, pressing edges to seal. Bake 10-15 minutes until pastry is crisp and golden.
5.Cool in tray 5 minutes before removing and serving topped with extra dill. If preferred, transfer to a wire rack to cool completely. Serve with lemon wedges.
