Ilaria’s burghul salad

When renovating a house one of the most unsettling things is having to make do without a kitchen. Rather than resigning yourself to takeaways every night, borrow an electric frying pan and a gas ring if you don’t already have them and have a go at turning out these dishes. It’ll keep you healthy, sane and on budget.

Method

1.Put the burghul in a fine sieve and rinse under running water. Transfer to a bowl, pour on boiling water then leave to soak for 30 minutes. Drain well, tip onto a clean cloth, bundle up and wring out excess water. Transfer to a clean dry bowl.
2.Add walnuts, cucumber, tomatoes, capers and parsley to the bowl. Whisk lemon oil, yoghurt, garlic and ½ teaspoon salt and plenty of black pepper together, then mix in lemon juice.
3.Pour over burghul and gently toss everything together. Strew with basil leaves and serve.

Serve with hot-smoked salmon or smoked fish to make a more substantial meal.
