1.Combine hoisin sauce, stock, garlic, chilli and ginger in a small jug.
2.Arrange pork in a shallow dish; cover with marinade, turning to coat well. Cover with plastic wrap; keep in fridge at least 20 minutes to marinate, basting occasionally.
3.Heat oil in a wok or frying pan on high. Stir-fry pork, in batches, 2-3 minutes each batch, until brown, reserving marinade. Remove from wok and set aside.
4.Add onion to same wok; stir-fry 1 minute. Return pork to wok with bok choy, broccolini, coriander and marinade; stir-fry 2 minutes.
5.Serve with steamed rice or noodles and sprinkle with extra coriander.
