1.In a glass bowl, combine half the oil, half the chilli, half the coriander, zest, ginger and garlic.
2.Rub mixture into chicken. Place chicken on a plate. Cover with plastic wrap; chill 10 minutes to marinate.
3.Meanwhile, combine tomato, onion and remaining oil, chilli and coriander in a bowl; season.
4.Preheat a char-grill or barbecue grill on high. Cook chicken, in batches, 2 minutes each side, or until brown and cooked. Transfer to a plate. Cover with foil; rest for 5 minutes. Slice.
5.Arrange chicken and tomato salsa on serving plates. Serve drizzled with extra oil.
If time allows, marinate chicken for up to 1 hour.
