1.In a saucepan of boiling water, cook noodles following packet instructions.
2.Meanwhile, heat a large frying pan on high. Spray chicken with olive oil; season to taste. Cook 2-3 minutes each side, until cooked through. Transfer to a plate.
3.To make the dressing, in a screw-top jar, combine all ingredients. Shake well.
4.Drain noodles and rinse under cold water in a colander; drain well and transfer to a bowl. Add vegetables and half dressing; toss to combine.
5.Slice chicken into strips. Arrange over salad; drizzle with remaining dressing. Sprinkle with coriander to serve.
