1.Bring stock, water and ginger to boil in large saucepan. Add chicken, return to a boil then reduce heat; simmer, covered, 15 minutes, or until chicken is cooked through. Remove chicken, cool for 10 minutes, then shred coarsely.
2.Return broth mixture to a boil. Add noodles, juice and sauce. Reduce heat, simmer, stirring, until noodles are just tender.
3.Add chicken and remaining ingredients to broth, stir over heat until hot.
4.Serve with wedges of lime and follow with a selection of tropical fruit, if you like.
