Fish and olive filo parcels

The little golden parcels are delicious and easy to make.

Ingredients

Method

1.Preheat oven to 200C. Place filo in four stacks of 3 sheets, brushing oil between each layer.
2.Place a fish fillet at one end of the filo and cover with sliced mushrooms and a dollop of olive pesto. Fold in the sides of filo and roll into a package.
3.Place the parcel seam-side down on a greased oven tray. Brush with oil and sprinkle with almonds.
4.Bake for 12 to 15 minutes or until golden and cooked.
